Recipes from Ulichka. Sweet pastry:

Àpple strudel  

Cooking time  1 h. 30 min.

Dough:

 
Flour  200 gr
Eggs  1 pc
Butter  2 tbsp
Vinegar  1 tsp
Water  50 ml

Filling:

 
Apple  1 kg
Cinnamon  1 tsp
Almond  150 gr
Raisins  75 gr
Lemon juice  1 tbsp
Sugar  100 gr
Butter  120 gr
Breadcrumbs   4 tbsp

Preparation:

Dough:
Put the flour in a bowl. Add lightly beaten egg, melted butter, vinegar and warm water. Knead the dough. The surface should be lubricated a little vegetable oil and knead the dough well. It will be quite soft, very pleasant to the touch, supple and dont stick to hands. Then you need to pick it up and drop it on the table a few times. The dough will become more homogeneous. Put the dough in a bowl, cover with a towel and put in a warm place for 20-30 minutes. When the dough is well rested, it would be better to stretch.

Cooking stuffing.
1. Wash the apples, remove skin and cut into thin slices. Each slice cut across in half, sprinkle with lemon juice.

2. Soak raisins in hot water for 10-15 minutes. Then drain it.

3. Breadcrumbs I prepare myself, so I use pieces of white bread. Dry bread on a dry frying pan, grind in a blender to make crumbs bread crumbs. Fry crumbs in 1 tablespoon butter.

4. Almonds dry on a dry frying pan. then chop.

5. Mix apples, raisins and nuts.

6. Make a mixture of sugar and cinnamon.

Work with the dough:

1. Lay a kitchen towel on the table. Good sprinkle it with flour. Put the dough on the center. Roll it with a rolling pin, lubricated with oil, as much as possible in a thin layer. It is important not to roll out too thin, because the dough will burst during baking, but at the same time try to roll it out pretty thin, so that through him was visible pattern on the towel.

2. Now spread the filling, it should be spread over the entire surface of the dough, leaving the all edges free. First laid out crumbs, then mix apples + raisins + nuts, then sprinkle with a mixture of sugar and cinnamon. Then fold the edges of the dough inside. Now carefully wrapped roll strudel: holding the edge of the index finger strudel, lifting the towel, making one after another inversion. Oil the melted butter in the process of wrapping. With a towel to transfer the generated strudel on a baking tray, the laid parchment paper (seam side down). Top strudel also softened butter to grease (found recipes where smeared with yolk). Bake for 40-50 minutes in the oven at 180C.

Get strudel, let cool slightly. Sprinkle with powdered sugar. Delicious with a scoop of ice cream. Bon Appetit!
